Almond, Fig & Cacao Cookies

almond-fig-cacao-cookies Monday was a holiday in the UK and I had such a beautiful day baking cookies and listening to the rain. It poured with rain the whole day but I didn’t mind because it gave me an excuse to spend the day cooking. Cooking and the sound of heavy rain falling makes for a very relaxing combination.

These cookies are made with almond flour and speckled with fresh figs and raw cacao chips. They are so delicious! They are free of refined sugar and sweetened by the figs and a little extra honey. I love to add oats to the mixture when I’m cooking with almond flour as it gives the cookies a little more structure and texture but if you’d prefer your cookies gluten free just leave out the oats and add some more almond flour. If you can’t find raw cacao to use in the cookies just make sure you use a dark chocolate that’s at least 70% cocoa. Raw cacao is basically unrefined, has gone through minimal processing and doesn’t include a whole list of other additives.

These cookies are the perfect treat and even better when shared with friends or family. Make these on your next rainy day or better yet this weekend and you won’t be disappointed.

Whole Wheat Apple Cinnamon Muffins

There are loads of quotes out there about trying things that scare you but this one is probably my favourite. ‘If it excites you and scares the crap out of you at the same time, it probably means you should do it’. This past weekend I did an acro yoga class with my gorgeous friend [...]

African Peanut & Sweet Potato Stew

Next week my love is setting off on a six week adventure through Africa, which will see him trekking Kilimanjaro, going on safari in the Serengeti and hiking through the jungles of Rwanda to see the gorillas. We watched Gorillas in the Mist on the weekend in anticipation and after all these years, it’s still [...]

Choc Banana Bites

Last week, during an evening filled with music and tomfoolery, I decided it might be a good idea to practice handstands against the wall at 10pm at night! For reference, perhaps not a good idea (unless you’re intending an all nighter!). It was certainly proof they give you loads of energy, as I found when [...]

Lemon & Mint Popsicles

The weather in London is so amazing today! It feels just like I'm back on the Gold Coast. Hot and humid and a thunderstorm to top it off. I feel right at home :) A summer's day isn't complete without an icy pole of some description and lemon and mint made the perfect combination for [...]

Whole Wheat Banana Muffins

Some of my best recipes are the ones where no planning is involved. I stand in the kitchen, look at the ingredients I have on hand and get to work. Simple! Every time I see overripe bananas sitting in my fruit bowl, I know it's the start of something delicious. And delicious these muffins were! [...]

Garden Vegetable Omelette

I have a confession! Until a couple of weeks ago, I was a food blogger unable to successfully cook an omelette. I know....gasp!  I would always end up with scrambled eggs, which tasted great but didn’t resemble what I was actually trying to make. I was speaking to my Dad recently who was telling me [...]

Almond, Date and Coconut Cookies

I definitely had my hand in the cookie jar over the weekend. These cookies are to die for! Normally I’m not a massive cookie fan, but when it came to these, I had to muster all my self-discipline to stop from having a fourth in one day! They are made with almond flour which keeps [...]

Baked Beetroot Chips

I was so excited to make these beetroot chips and I'm even more excited to share them with you! The result was amazing and I think you are going to love them. Beetroot is something that features regularly in my diet because it's so healing for the liver and gallbladder. These beetroot chips are coated [...]
