Thailand Adventure

You haven’t heard much from me lately as I’ve just got back from a two week trip to Thailand! I had such a wonderful time and while I was there I went to Thai cooking school. I can’t wait to share some of the recipes with you! Yep, I now know how to make a killer Thai curry!

I went to a small local cooking school in Koh Samui run out of a lovely ladies house. They grow all their herbs and vegetables free from chemicals and we had a tour around the garden before getting down to cooking. It was such an authentic experience and the food we cooked was some of the best I ate in Thailand. I feel really blessed to have these recipes, they are seriously delicious!

One of the teachers said she hopes to show people how simple Thai cooking is.  Once you have a good recipe to follow and all the ingredients gathered, it really couldn’t be simpler.

The most exciting thing was learning how to make the paste for green curry and panang curry. Sure it’s easy to use a curry paste from a jar but it never tastes quite the same as you get in Thailand. Plus there’s something really rewarding about pounding all the herbs in your mortar and pestle. It has the most amazing fragrance and connects you more to the food because you know exactly what ingredients are included.

My trip confirmed to me that if I was ever stranded on a tropical island, so long as I had a few coconut trees to sustain me, I’d be more than happy. Dad kept joking that coconuts would start growing out my ears if I had another one but they are seriously amazing. I’ve been addicted to coconut water ever since the craze hit the yoga arena but fresh coconuts are on a whole different level. They are a true gift from nature and one of my favourite things in the world to eat. I might have to consider moving to a tropical Island just so I can get my fix of fresh coconuts! Not sure London is going to deliver on that front.

If you follow me on Instragram you would have seen some pictures of my trip but I’ve included a few here as well. Stay tuned for my Thai Green Curry recipe coming very soon!

Butternut Squash & Fig Salad

Butternut Squash & Fig Salad thumbnail

Last week I had my gorgeous friend Zara over for dinner. While Mark is away I'm cooking for one, so I was very excited to have a beautiful friend to cook for. When food comes from the heart, it’s much more enjoyable when shared with someone special. You might remember a few weeks back I [...]

Almond, Fig & Cacao Cookies

Monday was a holiday in the UK and I had such a beautiful day baking cookies and listening to the rain. It poured with rain the whole day but I didn't mind because it gave me an excuse to spend the day cooking. Cooking and the sound of heavy rain falling makes for a very [...]

Whole Wheat Apple Cinnamon Muffins

There are loads of quotes out there about trying things that scare you but this one is probably my favourite. ‘If it excites you and scares the crap out of you at the same time, it probably means you should do it’. This past weekend I did an acro yoga class with my gorgeous friend [...]

African Peanut & Sweet Potato Stew

Next week my love is setting off on a six week adventure through Africa, which will see him trekking Kilimanjaro, going on safari in the Serengeti and hiking through the jungles of Rwanda to see the gorillas. We watched Gorillas in the Mist on the weekend in anticipation and after all these years, it’s still [...]

Choc Banana Bites

Last week, during an evening filled with music and tomfoolery, I decided it might be a good idea to practice handstands against the wall at 10pm at night! For reference, perhaps not a good idea (unless you’re intending an all nighter!). It was certainly proof they give you loads of energy, as I found when [...]

Lemon & Mint Popsicles

The weather in London is so amazing today! It feels just like I'm back on the Gold Coast. Hot and humid and a thunderstorm to top it off. I feel right at home :) A summer's day isn't complete without an icy pole of some description and lemon and mint made the perfect combination for [...]

Whole Wheat Banana Muffins

Some of my best recipes are the ones where no planning is involved. I stand in the kitchen, look at the ingredients I have on hand and get to work. Simple! Every time I see overripe bananas sitting in my fruit bowl, I know it's the start of something delicious. And delicious these muffins were! [...]

Garden Vegetable Omelette

I have a confession! Until a couple of weeks ago, I was a food blogger unable to successfully cook an omelette. I know....gasp!  I would always end up with scrambled eggs, which tasted great but didn’t resemble what I was actually trying to make. I was speaking to my Dad recently who was telling me [...]
